JOB SUMMARY:

Under the direct supervision of the General Manager, this position is responsible for managing and delivering excellent standard in food hygiene and food service through planned inspections and submission of audit report, and recommending corrective actions on the principle of verification and validation ultimately, to achieve guest satisfaction.

JOB DESCRIPTION:

  • Guide department managers to establish quality standards as per industry and market requirement geared towards ISO and HACCP certification
  • Work in coordination with other departments in implementing the quality standards, directed towards improving performance of departments.
  • Implement operations audit based on operating standards.
  • Prepares and achieves quality assurance financial objectives by estimating requirements; preparing an annual budget; scheduling expenditures.
  • Ensures that kitchen staff are following the FIFO and also date labeling
  • To ensure that stewarding are cleaning the kitchen the proper way and using the right chemicals for the right job
  • To implement the and rectify the hygiene standards
  • Conduct daily inspections of all the kitchens and all the outlets
  • To conduct mock audits weekly basis
  • To ensure the points that are not compliant in the audit are rectified and changed to compliant
  • To manage waste budget and management compliance
  • Participate in projects as requested to drive continuous improvement
  • Provide KPI data as required and comply with all internal and external audit requirements
  • Conduct employee PDR on regular basis
  • Hire and develop competent employees
  • Ensure disciplinary incidents and staff absences are dealt with in professional and timely
  • manner, in accordance with the company policies
