Responsibilities
- Coordinate and maintain a degree of supervision over all matters pertaining to the Food and Beverage operations.
- Directly responsible for the proper supervision and function of all Food and Beverage employees, facilities, operation, sales, costs and departmental profit.
- Analyze F&B operations from the standpoint of operating costs, increasing sales, efficiency, merchandising principles, work simplification and sanitation, making specific correction and recommendations necessary for optimum performance.
- Follow-up programs and policies to ensure compliance with prescribed methods and standards.
- Provide functional assistance and direction to F&B supervisors in all matters pertaining to F&B operations.
- Coordinate with the Purchasing agent to ensure that all purchases conform to specifications and quality standards.
- Maintain an up-to-date standard recipe file showing a complete cost breakdown and preparation for all items on the items on the menus, as well as specialty items which would be considered use.
- Develop or revise all Job Descriptions for the F&B Department to develop a more efficient team.
- Make daily inspections of F&B Department including all restaurants, kitchen. Storeroom, and all other areas under his control.
- Schedule training /cross-training for his staff in coordination with the HR Department.
- Be a willing team worker at all times. Accept and perform special assignments within or outside his department as requested by his Immediate Superior.
- Keep abreast of all company policies and code of conduct by reading and understanding all guidelines issued pertaining to such matters; and performing such duties and functions as specified in the guidelines.
